Ingredients:

  • 4-6 chicken breasts or thighs

  • 1 tablespoon allspice

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon thyme

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon brown sugar

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 tablespoon cayenne pepper

  • 1/4 cup olive oil

  • 1/4 cup soy sauce

  • 1/4 cup vinegar

  • 1/4 cup orange juice

  • 1/4 cup lime juice

Instructions:

  1. Preheat oven to 375°F.

  2. Combine all dry ingredients in a bowl and mix well.

  3. In a separate bowl, mix together olive oil, soy sauce, vinegar, orange juice, and lime juice.

  4. Add the dry ingredients to the wet ingredients and stir well to form a thick paste.

  5. Score the chicken to allow the marinade to penetrate.

  6. Apply the paste generously to the chicken.

  7. Cover the chicken with cling wrap and refrigerate for at least 2 hours or overnight.

Instructions: For Grill

  1. In a large bowl, whisk together the vegetable oil, soy sauce, vinegar, orange juice, lime juice, brown sugar, garlic, ginger, thyme, allspice, black pepper, salt, and habanero peppers until well combined.

  2. Add the chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 2 hours or overnight.

  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and shake off any excess.

  4. Place the chicken on the grill, skin-side down, and cook for 5-7 minutes, or until the skin is crispy and charred. Flip the chicken and cook for another 5-7 minutes on the other side.

  5. Reduce the heat to medium-low and continue to cook the chicken, turning occasionally, until it is cooked through and the internal temperature reaches 165°F.

  6. Remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped green onions (if desired) and serve with lime wedges.
