2 carrots, sliced
2 potatoes, cubed
1 chayote squash, peeled and cubed
1 small head of cabbage, chopped
1 small leek, chopped
2 scallions, chopped
1 celery stalk, chopped
2 cloves garlic, minced
2 tbsp oil
1 tbsp thyme
2 tsp parsley
1 Scotch bonnet pepper (for heat, optional)
Salt and pepper to taste
Water or beef stock (about 6-8 cups)
For the Epis (Haitian Seasoning Blend):
1/2 bell pepper
1/2 bunch parsley
2 cloves garlic
1/4 cup oil
1 scallion
1 tsp thyme
Salt and pepper to taste
Directions
Step 1: Marinate the Meat
In a bowl, combine beef stew meat, minced garlic, diced onion, lime juice, and epis seasoning. Add salt and pepper to taste.
Marinate the meat for at least 1 hour in the refrigerator for maximum flavor.
Step 2: Prepare the Soup Base
In a large pot, bring water or beef stock to a boil and add pumpkin cubes. Cook until the pumpkin is tender, about 15-20 minutes.
Remove the pumpkin from the pot, mash it into a smooth purée, and set aside.
Step 3: Cook the Meat
In a separate large pot, heat oil over medium heat.
Add the marinated meat, and cook until browned on all sides, ensuring it develops a rich flavor.
Add minced garlic and stir until fragrant.
Step 4: Build the Soup
Pour the mashed pumpkin back into the pot with the meat.
Add carrots, potatoes, chayote, cabbage, leek, scallions, and celery to the pot.
Season with thyme, parsley, salt, and pepper. If you prefer some heat, add the Scotch bonnet pepper.
Add enough water or beef stock to cover the vegetables and meat, ensuring a soupy consistency.
Cover the pot, reduce heat, and simmer for about 45 minutes to 1 hour, or until all ingredients are tender and flavors have melded.
Step 5: Final Adjustments and Serve
Taste the soup and adjust seasonings as needed.
Ladle the soup into bowls and serve hot, garnished with fresh parsley if desired.
