  • 1 cup evaporated milk


Method:

  1. Prepare the Hominy Corn: Start by soaking 2 cups of hominy corn in water for 24 hours. This softens the corn and prepares it for cooking.

  2. Boil the Corn: In a large pot, add the soaked hominy corn along with 3-4 cups of water. Add a pinch of salt, 1 tsp of sugar, and a cinnamon stick to the pot. Bring the mixture to a boil, then reduce the heat to medium and let it cook for 45 minutes to an hour. The corn should be soft to your desired taste.

  3. Add Coconut Milk: Once the corn is cooked to your liking, add 1 cup of coconut milk to the pot. Continue cooking for an additional 15-20 minutes, allowing the flavors to meld together.

  4. Thicken the Porridge: To give the porridge a nice body, prepare the corn flour mix by combining 2 Tbsp of corn flour with 2 Tbsp of water. Stir this mixture into the porridge, ensuring it is well combined.
