Ingredients


For the Stir Fry:

  • 1 lb (450g) boneless, skinless chicken breast, sliced into thin strips

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 medium broccoli crown, cut into small florets

  • 1 medium zucchini, sliced

  • 1 large carrot, julienned

  • 1 cup snap peas or green beans

  • 2 tbsp vegetable oil (or sesame oil for extra flavor)


For the Sauce:

  • 1/4 cup low-sodium soy sauce

  • 2 tbsp hoisin sauce

  • 2 tbsp oyster sauce (optional for added depth)

  • 1 tbsp honey or brown sugar

  • 1 tbsp rice vinegar

  • 1 tbsp fresh ginger, minced

  • 2 cloves garlic, minced

  • 1 tsp cornstarch mixed with 1 tbsp water (for thickening)


Instructions

Step 1: Prepare the Sauce

  1. In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce (if using), honey or brown sugar, rice vinegar, minced ginger, and minced garlic.

  2. Set aside the sauce for later use.

Step 2: Cook the Chicken

  1. In a large skillet or wok, heat 1 tbsp of vegetable oil over medium-high heat.

  2. Add the sliced chicken to the pan and cook for about 5-6 minutes, until golden brown and cooked through. Remove the chicken from the pan and set aside.

Step 3: Sauté the Vegetables

  1. Add another 1 tbsp of oil to the same pan, then add the sliced bell peppers, broccoli florets, zucchini, carrot, and snap peas.

  2. Stir-fry the vegetables for 4-5 minutes, until they start to soften but remain crisp.

Step 4: Combine and Add the Sauce

  1. Return the cooked chicken to the pan with the vegetables.

  2. Pour in the sauce and mix everything well.

  3. Add the cornstarch slurry to the pan to thicken the sauce, stirring continuously for about 2 minutes until the sauce coats the chicken and veggies.

Step 5: Serve

  1. Remove from heat and serve the chicken stir fry over steamed rice, quinoa, or noodles.

  2. Garnish with sesame seeds and sliced green onions if desired.
