Belizean Sweet Potato Pound Recipe

  • 2 lbs sweet potatoes, peeled and grated

  • 1 cup coconut milk

  • 1 cup evaporated milk

  • 1 cup brown sugar

  • 1/2 cup all-purpose flour

  • 1/2 cup raisins (optional)

  • 1/4 cup melted butter

  • 1/4 cup grated coconut (optional)

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground ginger

  • 1/4 tsp salt


Instructions:

  1. Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease a baking dish or loaf pan.

2. Grate Sweet Potatoes:

  • Peel and grate the sweet potatoes. You can use a food processor to make this step easier.



3. Mix Dry Ingredients:

  • In a large mixing bowl, combine the grated sweet potatoes, brown sugar, flour, raisins (if using), grated coconut (if using), cinnamon, nutmeg, ginger, and salt. Mix well to ensure everything is evenly distributed.
