Ingredients (Makes 6 rotis)

  • 3 cups all-purpose flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1 tbsp vegetable oil or melted butter

  • 1 cup warm water (adjust as needed)

  • ½ cup vegetable oil or ghee (for brushing)


Instructions

Step 1: Prepare the Dough

  1. In a large bowl, mix the flour, salt, and baking powder.

  2. Add the oil or melted butter and mix well.

  3. Gradually add warm water, kneading until a soft, smooth dough forms.

  4. Cover the dough with a damp cloth and let it rest for 30 minutes to 1 hour.


Step 2: Roll and Layer the Dough

  1. Divide the dough into 6 equal portions and roll each into a smooth ball.

  2. On a floured surface, roll out each ball into a thin circle (about 8 inches in diameter).

  3. Brush the surface with oil or ghee, then make a cut from the center to the edge of the circle.

  4. Roll the dough into a cone shape, starting from one end of the cut, then flatten the cone slightly.

  5. Cover the cones with a damp cloth and let them rest for another 15 minutes.


Step 3: Cook the Roti

  1. Heat a flat skillet or tawa over medium heat.

  2. Roll out each cone into a thin circle again.

  3. Place the roti on the hot skillet and cook for 1-2 minutes on each side, brushing with oil or ghee.

  4. Use a spatula to press gently, allowing it to puff up slightly.

  5. Once golden brown and cooked through, remove from heat and clap the roti between your hands or use a kitchen towel to create layers.

  • Channa (Chickpea) Curry
