This delicious rice dish both fresh-tasting and festive-looking. It's the perfect light side dish for a big holiday meal.
Ingredients
1 cup rice
2 cups chicken broth
1 1/2 tbsp. grated ginger
2 cloves garlic, minced
1 medium sweet pepper (green), chopped
1 medium sweet pepper (red), chopped
1/2 medium onion, chopped
1 sprig celery, chopped finely
2 sprigs fine leaf thyme, chopped finely
1/3 cup raisins
2 tbsp. butter
Salt to taste
Directions
1. In a skillet, ginger, garlic, and onion in butter over medium heat for 2 minutes or until crisp-tender. Remove from the heat; set aside.
2. In a saucepan, bring broth to a full boil. Remove from the heat. Quickly stir in rice, celery thyme sweet peppers and raisins mixture, salt if desired and pepper.
3. Cover and let stand for 6-7 minutes. Stir before serving. Yield: 6 servings.
