- Auditions for Dancehall Week’s ‘Rep Yuh Parish’ competition extends to November 29
Kingston, Jamaica, November 7, 2024– Dancers and disc jockeys/ sound system selectors from all over the island are being encouraged to enter the exciting Rep Yuh Parish competition for a chance to win up to $1,500, 000 in cash and prizes. To ensure that all talents get a chance, the auditions have been extended to November 29, 2024. Talisa Taylor, Project Manager for Dancehall Week noted that the competition was incorporated to give undiscovered talents a chance to showcase their capabilities. “Jamaica has a wealth of talent, and oftentimes, these talents are overlooked simply because they do not have the platform. We want to be able to create a platform for them to be able to make a name for themselves. I implore people who are extremely talented in the area of dance; whether individually or in a group, or those who are selectors to showcase their best effort. This is an opportunity for you to make a name for yourself, and represent not just your parish, but Jamaica,” Taylor said. Applicants may submit a clean, one minute video along with their name, age, parish being represented, and TikTok handle to repyuhparish@dancehallweek.com by the deadline. The videos will be uploaded to Dancehall Week’s official TikTok page upon submission. The videos with the most interaction will be announced as semi-finalists on November 30. Those who advance to the semi-final round will compete in Kingston on December 14. Finalists will compete on March 1, 2025 at the Ranny Williams Entertainment Centre during Dancehall Week. The best individual dancer will receive $500,000, while the best dance group and best selector/ DJ will also walk away with $500,000, respectively. Adding that entries have already been received, Taylor reiterated that organisers extended the audition deadline to accommodate more contestants. The Project Manager further said that through this competition, more Jamaicans will be incorporated into Dancehall Week’s festivities thereby promoting inclusivity. “We had a sound system clash in the very first staging of Dancehall Week, earlier this year and we realised that we were showcasing talents that were already established within the Dancehall industry. We wanted to give other persons, who have not made a name for themselves, the opportunity to be able to shine and showcase their craft. In addition, during the very first staging of Dancehall Week, there was a lot of emphasis on Kingston, so, we decided that this was a great way to reach out to talents from all parishes,” Taylor said. Dancehall Week, slated for February 23- March 2, 2025, is officially a part of the Reggae Month celebrations, promising to be a landmark event that not only entertains but also educates and inspires both new and long-standing fans of dancehall culture. - Haitian Black Mushroom Rice (Diri ak Djon Djon) Recipe
Haitian Black Mushroom Rice, also known as Diri ak Djon Djon , is a beloved traditional dish in Haitian cuisine. This flavorful, aromatic rice gets its distinctive black color and earthy taste from dried djon djon mushrooms , which are unique to Haiti. Diri ak Djon Djon is often reserved for special occasions and family gatherings, but it’s delicious enough to enjoy any day of the week. Here's a step-by-step guide to making this flavorful dish that combines rice, mushrooms, and spices to create an authentic taste of Haiti. Ingredients 1 cup of dried djon djon mushrooms (or mushroom powder if dried mushrooms are unavailable) 4 cups water 2 cups long-grain rice 1/4 cup vegetable oil or butter 1 small onion , finely chopped 1 bell pepper , finely chopped 1 teaspoon garlic , minced 1 cup green peas or lima beans (optional) 1 scotch bonnet pepper (optional, for a touch of heat) 1 teaspoon thyme Salt and pepper to taste Instructions Prepare the Djon Djon Mushroom Stock In a medium pot, add the dried djon djon mushrooms and 4 cups of water. Bring to a boil, then let it simmer for about 10–15 minutes. This will release the mushroom’s color and flavor into the water. Strain the liquid into a bowl and discard the mushrooms. Set aside the black mushroom stock; this will be the base for cooking the rice. Rinse and Prepare the Rice Rinse the rice under cold water until the water runs clear to remove excess starch. Set aside. Sauté Vegetables and Spices In a large pot, heat the oil or butter over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are soft and fragrant, about 3–5 minutes. Combine Ingredients Add the rice to the pot with the vegetables and stir to coat the rice in the oil and seasoning. Add thyme, salt, and pepper. Slowly pour in the djon djon mushroom stock. Stir everything together, then bring the mixture to a boil. Cook the Rice Once the pot reaches a boil, reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice has absorbed all the liquid and is tender. If you’re adding green peas or lima beans, add them during the last 10 minutes of cooking. For added heat, you can place a whole scotch bonnet pepper on top of the rice during cooking (do not pierce it if you prefer a milder flavor). Fluff and Serve Remove the pot from the heat and let it sit, covered, for a few minutes. Fluff the rice with a fork before serving. Tips for Serving and Storing Serving Suggestions : Diri ak Djon Djon pairs well with meats like griot (fried pork), stewed chicken, or seafood dishes. A simple salad or fried plantains on the side makes for a balanced meal. Storage : Store leftover rice in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of water to restore moisture. Recipe Variations Vegetarian Option : Skip the meat or seafood pairing and add more vegetables like carrots, corn, or green beans. Spicier Option : If you enjoy spicier dishes, add a chopped scotch bonnet pepper to the rice while cooking. Diri ak Djon Djon brings together the earthy, umami-rich flavor of Haitian mushrooms with tender, fragrant rice for a dish that’s both simple and elegant. Perfect for family gatherings or as a treat to yourself, this dish is a true taste of Haiti that’s sure to impress! #HaitianFood #DiriAkDjonDjon #HaitianCuisine #BlackMushroomRice #HaitianRecipes #TraditionalHaitianFood #CaribbeanCooking #RiceAndBeans #DjonDjon #AuthenticHaitianFood #HaitianDish #CaribbeanRecipes #IslandCuisine #FoodBlog #HaitianHeritage
- The Best Mac and Cheese Recipe You’ll Ever Make!
Nothing says comfort food quite like a warm, creamy bowl of mac and cheese! Whether it’s a cozy family dinner, a holiday side dish, or a soul-soothing treat, this mac and cheese recipe will take you to comfort-food heaven. Here’s the ultimate recipe to create a cheesy masterpiece, along with a few handy tips to make it extra special. Ingredients For the Pasta: 1 lb elbow macaroni (or any short pasta of your choice) Salt, for pasta water For the Cheese Sauce: 4 tbsp unsalted butter 1/4 cup all-purpose flour 4 cups whole milk (or substitute with half-and-half for a richer sauce) 2 cups shredded sharp cheddar cheese 1 cup shredded mozzarella cheese 1 cup shredded gruyère (or Swiss cheese for a milder flavor) 1/2 cup shredded Parmesan Salt and pepper, to taste 1/4 teaspoon mustard powder (optional, for added depth) 1/4 tsp smoked paprika (optional, for a smoky flavor) For the Topping (optional): 1/2 cup panko breadcrumbs 2 tbsp melted butter 1/4 cup shredded Parmesan cheese Instructions: Step 1: Prepare the Pasta Cook the Pasta: Boil a large pot of salted water and cook the pasta until al dente. Follow package instructions for timing, but aim to slightly undercook so the pasta doesn’t get mushy in the oven. Drain and set aside. Tip: Toss the cooked pasta with a bit of butter or oil to keep it from sticking together while you make the sauce. Step 2: Make the Cheese Sauce/Roux Prepare the Roux: In a large saucepan, melt butter over medium heat. Add the flour, whisking constantly for 1-2 minutes until the mixture is smooth and golden. This creates a roux that will thicken the sauce. Add the Milk: Slowly whisk in the milk, pouring in about 1 cup at a time. Continue to whisk until the mixture is smooth and begins to thicken (about 5 minutes). Incorporate the Cheese: Lower the heat and gradually add in the cheddar, Mozzarella, Gruyere, and Parmesan, stirring until fully melted. Season with salt, pepper, mustard powder, and smoked paprika if using. Tip: Grate your own cheese for a smoother, creamier sauce. Pre-shredded cheese often contains additives that can affect the sauce's texture. Step 3: Combine Pasta and Sauce Mix It All Together: Add the drained pasta to the cheese sauce, stirring until each noodle is coated in the creamy mixture. Tip: Taste the mixture before baking and adjust the seasoning if needed. A little extra salt or pepper can make all the difference! Step 4: Add the Topping Optional Breadcrumb Topping: In a small bowl, combine panko breadcrumbs with melted butter and grated Parmesan. Sprinkle evenly over the mac and cheese. Step 5: Bake Bake Until Golden: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a baking dish, and bake uncovered for 20-25 minutes, or until the top is golden and bubbly. Tips for the Best Mac and Cheese Every Time Choose High-Quality Cheese: Freshly grated cheese melts better and provides a smoother texture. Pre-grated cheese often contains additives to prevent clumping, which can make your sauce grainy. Use Full-Fat Dairy: Whole milk or a mix of milk and cream creates the creamiest sauce. Season Gradually: Adjust salt and spices after the cheese melts to avoid over-seasoning. Experiment with Cheeses: A mix of sharp cheddar, Mozzarella, Gruyere, and Parmesan adds complexity, but feel free to try Gouda, Fontina, or Monterey Jack for a twist. Choose the Right Pasta: Short, ridged pasta like cavatappi, shells, or even rotini hold onto the cheese sauce better, ensuring every bite is cheesy and delicious Don’t Overbake: The sauce will thicken as it cools, so bake just until the top is golden. Serve up this creamy, dreamy mac and cheese as a side dish or the star of the show, and prepare for compliments! Whether you like it straight from the stovetop or baked with a crunchy topping, this recipe has everything to make your mac and cheese the best it can be. - Meet Haitian Canadian Actress Mélissa Toussaint
Haitian Canadian Actress Melissa Toussaint is fast becoming one of Canada`s emerging stars. Born in Canada, raised in Port-au-Prince and New York City Melissa journey has been one of turmoil, deportation and isolation. Never one to back down, she has been able to overcome her challenges She can be seen Hallmark Channel`s Love Locks starring opposite Rebecca Romjin, The upcoming Darren Arronvsky film Mother! starring Jennifer Lawrence and the upcoming HBO miniseries Bad Blood starring Anthony Lapaglia. CEM got the chance to have a Q & A with this talented actress Melissa, could you please introduce yourself to our readers? Hello everyone. My name is Mélissa Toussaint, theme artist. Actress, singer and enthusiast of all creative pursuits. You are of Caribbean heritage. What was it like growing up in a Caribbean household? Well, it was the root of all my beginning. Being of Haitian descent, growing up in a Caribbean household was chaotic, loud and crowded. Lots of cousins, aunties and family all under one roof. There was never a dull moment. How did you get into acting? Where do I start? I suppose it all began once upon a time in high school. I had a wonderful music teacher, who understood me very well. I was very shy during my teen years, and she pushed me to audition for that year`s musical, West Side Story. I landed the role of Rosalia, one of Shark`s girlfriends; and being a timid, awkward immigrant myself, I was amazed at how I identified and connected with the role. I`ve been hooked creatively ever since. What were some of the challenges you faced and are still facing as an Actress? My biggest challenge was definitely overcoming the negative perception of being an actress. Unfortunately, there is a lack of understanding in my community regarding a career as an artist. There were no Haitians on television or in the movies. It was considered a fantasy. That, combined with my anxiety, made it extremely hard for me at the beginning. I had to come to a decision that this was worth me fighting for. You will be in the film Mother! starring Jennifer Lawrence. What role do you play? Yes! I play an uninvited and extremely unwelcomed house guest. How did you first become aware of Mother? I received a request to audition from my agent. It was quite an honor to be considered. What was it like to work with Jennifer Lawrence? Most of my scenes were with Javier Bardem, who is incredibly kind and professional. I was very fortunate to be a part of the production. You also have a principal role on FX’s Bad Blood, tell us about that? Bad Blood is a gripping six-part drama series, based on the book, Business & Blood: Mafia Boss Vito Rizzuto’s Last War, by Antonio Nicaso and Peter Edwards. I play Detective Andrea, one of the detectives responsible for arresting Canada`s legendary godfather. How do you prepare in advance for a role in a movie? I do an extensive amount of reading and I research everything and that has to do with the story and character. Once I have all my facts, that`s when I start doing the inner work. I see what is similar and dissimilar between me and the character, to figure out what would motivate the character to make the choices she makes. Who has been a mentor to you in your acting career? I have been blessed in the last few years, in surrounding myself with great men and women, who have created great careers for themselves. To name a few: my agent Constantine Kourtidis, who helps me stay focused on the business side of things, my friend Carolyn Fe, who reinvented herself as one of Canada`s Blues Divas, after years of being a successful businesswoman. She gave it all up to pursue her true passion. And Tammy Wilson, my voice teacher and guru. We would need another article to express the gratitude I have for the knowledge I gained! What has been your favorite role to date? All of them have been an incredible experience. It is too soon to choose a favorite. What’s the best thing about acting? I love how it helps bring me to a better understanding of who I am and how I relate to others. I spent much of my life confused, always feeling apart, and unable to fit in. Acting helps me to connect by focusing on the similarities and not the differences. What was your worst audition ever? My worst ever would have to have been at the beginning of my career. I knew nothing about auditioning and I was sent in by my former agent to audition for a music video. I`ll never forget it. It was for the R&B group, “Next”, and at the audition, they asked me to have a conversation with the girl next to me. Simple enough you would think, except once they yelled action, I mimed the whole thing. Every music video I`d seen had no dialogue. I will never forget how they all stared at me for what seemed an eternity. I like to call it “my learning experience”. In reality, are you similar to any of those characters you have portrayed? In some ways I would have to say yes. I`m a lot more happy than most of the characters I play. If you were not an actress, what would you want to be and why? I don`t know. I`ve tried many other things and this is the one I seem to be a little good at. ☺. Maybe, a teacher, I love sharing what I learn and discover. What’s next for Melissa? La-La Land of course! What advice would you give kids that would like to get into acting? My advice is to be prepared to be in it for the long haul. Know who you are, be extremely passionate, and be proud to call yourself a working actor. Take classes, practice every hour of every day, and just when you think you know it all, practice some more, because there is never enough of what you can learn. Photo Credit: Karin Benedict
- The Rich History and Culture of Haiti: Exploring the Soul of the Caribbean
Haiti is a Caribbean island that is often overlooked by tourists and travelers, but this small country has a rich history and culture that is well worth exploring. From its tumultuous past as a French colony to its vibrant arts scene and unique cuisine, Haiti has a lot to offer visitors who are willing to venture off the beaten path. One of the most interesting aspects of Haitian culture is its deep African roots. Haiti was a major center of the transatlantic slave trade, and many of the country's people are descendants of West African slaves who were brought to the island. This heritage is reflected in Haiti's music, dance, and religion. Vodou, a syncretic religion that blends elements of African spirituality with Catholicism, is widely practiced in Haiti and has had a profound influence on the country's culture. Another important aspect of Haitian culture is its artistic tradition. Haitian art is known for its vibrant colors, bold imagery, and deep symbolism. Haitian painters like Hector Hyppolite and Philomé Obin are famous for their depictions of everyday life in Haiti, while sculptors like Edouard Duval-Carrié have created stunning works that explore the country's history and mythology. Haiti's cuisine is also a reflection of its unique culture. The country's most famous dish is griot, a savory pork dish that is often served with rice and beans. Other popular Haitian dishes include tassot, a type of fried beef, and akra, a fried cassava fritter. Haitian cuisine is heavily influenced by African, French, and Caribbean flavors, and is a testament to the country's diverse heritage. Despite its many cultural riches, Haiti has faced its share of challenges over the years. The country has struggled with political instability, poverty, and natural disasters, including a devastating earthquake in 2010. But despite these difficulties, Haitians remain resilient and proud of their unique heritage. For visitors who are interested in exploring the soul of the Caribbean, Haiti is a must-see destination. From its vibrant arts scene to its delicious cuisine and deep African roots, Haiti offers a glimpse into a culture that is unlike any other in the region.
- The Haitian Government Cancels Carnival for 2022.
PORT AU PRINCE, Haiti – Due to the ongoing COVID-19 pandemic, which has killed 804 individuals and infected 29, 715 others over the course of two years, the government has decided to postpone Carnival this year. In a statement, the Ministry of Culture said that while the pandemic had been a major factor in taking the decision to cancel the national celebrations, economic issues as well as overall security in the French-speaking Caribbean Community (CARICOM) country had also contributed to the decision. “Carnival has always been a traditional and popular festival celebrated in all the large and medium-sized cities of the country. The Government, because of the economic difficulties faced by the country, has decided this year not to organize a National Carnival, but to support certain town halls who wish to offer their community of carnival festivities by evaluating the health and security risks,” the Ministry of Culture said. The government also reminded the public that “the COVID-19 is actively circulating in Haiti and that it is imperative to get vaccinated to protect yourself and those around you and to continue to observe your barrier gestures”. According to data given here, 130,440 Haitians, or roughly 1.12 percent of the population, have received the first dosage of the "Spikevax" vaccine from the Moderna Laboratory since July 16, 2021, and 93,809 Haitians are completely vaccinated as of January 30, 2019. Kanaval, or Haitian Carnival, is a week-long festival conducted each year in the run-up to Mardi Gras.
